Country Sausage Chili Recipe
2 pounds bulk spicy beef sausage
2 green bell peppers, seeded and chopped
2 cups chopped onion
1 tablespoon chopped garlic
2 cans (28 ounces) crushed tomatoes
2 cans (4 ounces each) diced green chilies, drained
¼ cup ground chili powder
¼ cup molasses
1 tablespoon brown mustard seeds
2 teaspoons red pepper flakes
1 bay leaf
Add hot pepper sauce as per your desired taste
Makes 6-8 servings
1. Brown beef sausage in large Dutch over medium heat. Drain fat, leaving two tablespoons of fat in the pot with browned sausage. Break sausage into smaller chunks. Stir in bell peppers, onions and garlic. Cook and stir about 5 to 8 minutes or until onion is translucent.
2. Add crushed tomatoes, diced green chilies, chili powder, molasses, mustard seeds, red pepper flakes, bay leaf and hot sauce. Simmer about 1 hour or until thickened. Remove and discard bay leaf. Service with biscuit or cornbread if desired. Sit back and enjoy!
