Beef Chuck Chili Recipe
½ cup olive oil
5 pounds beef chuck roast, trimmed of all fat
3 cups of minced onions
4 poblano chilies, seeded and diced
2 serrano chilies, seeded and diced
2 tablespoons of minced garlic
2 green bell peppers, seeded and diced
3 jalapeno peppers, seeded and diced
1 can (28 ounces) crushed tomatoes
1 tablespoon ground cumin
¼ cup hot pepper sauce
black pepper
Makes 8 to 10 servings
Slow Cooker Directions
1. Heat olive oil in large skillet over medium-high heat until hot. Add chuck roast, and sear on both sides. Remove beef to the slow cooker.
2. Place onions, chilies and garlic in skillet. Reduce heat to low. Cook and stir for 7 minutes. Add all to slow cooker. Add crushed tomatoes. Cover, and cook on low heat for 4 to 5 hours or until beef is fork-tender.
3. Shred beef. Stir cumin, hot pepper sauce, and pepper. Serve mixture over rice or cornbread and enjoy!
